Picture this. You just got home from work and you’re starving. You pop into your kitchen, take the veg out of the fridge and start chopping it all up. Once that’s the done you can start cooking.Wouldn’t it be easier if you could take a step less and start cooking as soon as you walk in and therefore eating earlier? The trick is chopping fresh veg earlier and then freeze it. Here are my hints… When you do your shopping at the supermarket, get enough fresh veg to last you for a month. Go home and just the way you stock your cupboards with packed food, just stuff your freezer with already chopped fresh veg. Instead of putting the whole vegetable in the freezer, think of recipes and cut the veg into pieces as you would need them for a recipe, that way when you come back home from work all you need to do is just take the bag out the freezer and chuck the amount you need into the cooking. Think of different recipes, I for example chop mushrooms: - In Cubes Ready for my omelette - In Fours Ready for my creamy pasta sauce - In Slices Ready for my gravy Once you've done it for the first time, it begins to get easier and you pick up a rhythm. Now I estimate that it takes me approximately 30 minutes after my shopping to get all of the veg chopped. Don’t forget it is a month’s stock so that’s 1 minute a day. Think of how much time you’ve saved during the week. If you do not freeze your veg, it will last less, meaning more trips to the supermarket, and also the added time it takes to wash the veg and chop it. With this method you just spend 30 minutes in a month to chop the veg and one trip a month to the veg section of the supermarket.
So next time you go to the supermarket, just stuff your trolley with veg and freeze it. You won’t believe how much time you’ll save. You’ll love me next time you come back from work and you feel like you have lions roaring out of your stomach. Now that you know how to save time, you can put your legs up on that sofa quicker. The trick is not to wash them before you freeze them - to avoid them going black. Cut all the veg in different shapes and sizes as you will need them and freeze them without washing them. When you use them however, just chuck them in a bowl of water for a few seconds, that way you are washing your veg and defrosting it at the same time.
