This recipe is incredibly simple but the resulting taste and texture is amazing. It's a very popular day-to-day recipe in the north of Italy.

If followed carefully, you will be rewarded with extremely tender and tasty chicken, something to do with the chicken being sealed before cooking and the butter combination.

Preparation time: 20 minutes or less depending on your agility.

What You'll Need...

Chicken Breast (preferably filleted), roughly 250 grams per person or 350 for the boys.

  • 1 teaspoon of butter per person (Real butter made from Milk, not margarine)
  • 50 grams of flour
  • 1/4 lemon per person. (Or Dijon Mustard goes well too)
  • Side Dish: You need a side dish to go with the chicken and the quickest and healthiest is frozen veg, like carrots, peas, caulliflour etc.. You can also have fries (Oven chips are probably easiest). It's up to you. Mashed potatoes can be nice with this dish also but it takes longer to prepare.

How to...

Defrost

Ideally, you move the chicken into the fridge from the freezer the night before. You can use a microwave to thaw the chicken but make sure it's on the Defrost setting (Icon normally looks like a spiky star), otherwise you end up with something indescribable. When defrosting with a microwave, be patient, let the chicken rest for a few minutes before giving it another go and change its position frequently otherwise it will cook around the edges.

Prepare

Pour the flour on the side of a flat plate or separate chopping board.

If you chose to have oven chips, you might want to pre-heat the oven to save time.

Unpack the chicken and cut it in smaller pieces making them long, wide and flat. You would normally split the breast in half, remove the excess ligaments and fatty parts, and then slice it width-wise with the blade at 45º so that you end up with flat but chunky pieces. Each slice needs to be dipped into the flour on both sides to cover it with a light flour coating.

Check the oven and put the chips in if that is what you're having on the side.

Preparing meats takes getting used to so be patient, it's better to learn to do it well to reduce future preperation time then trying to rush and not learning how to be quick. It now takes me 5 or less minutes to completely prepare the chicken for this recipe.

Cook

Once the chicken is prepared, you can put the frozen veg in a pan to start preparing your side dish. Normally these take 5-10 minutes to be ready. It is preferred to have the veg cooked a bit "Al-Dente" but this is totally up to you.

Fire up one large frying pan and put a teaspoon (per person) of butter. Quickly spread it around the pan once melted and lay the chicken pieces flat and side by side. Let them cook on one side for 4-5 minutes checking them regularly. You need to look for a golden colour on the cooked side. Once the golden colour is reached, flip them over starting from the first piece which was layed on the pan. Wait for 3 minutes and you should find the chicken is now golden from both sides.

Turn the flame off and move the chicken pieces to the plates to avoid it cooking further.

Serve with a piece of lemon or your favourite sauce. Dijon Mustard on the side is Stella's favourite.
