One of my before pay day dinners and all time favorites ... Spaghetti Carbonara!

  Here's all you will need :


   1 Packet of pancetta or bacon
   500 grams spaghetti 
   1 cup cream 
   4 eggs
   2 cups grated Parmesan cheese

Here's how it's done:

Bring a large pot of water to the boil and add a pinch of salt.

While water is boiling add some olive oil or butter to a pan and start frying off the pancetta or bacon - until browned - then remove from heat.

Throw the spaghetti in the water and cook till just one minute under cooking time - usually aproximately 8-9 minutes.

While you are waiting for spaghetti to cook whisk, cream, cheese, eggs in a bowl and add pepper and salt to taste.

When pasta is done - drain, reheat the bacon (on a low heat) and add the pasta to the pan.

Pour the egg mixture over the spaghetti and mix well until the egg is cooked through - add a little more cream to ensure the texture is not dry.

Serve up and add some more parmesan shavings if desired - there's never too much parmesan in this dish!
