Main Course | Serves 4 - who am I kidding! It's so good everyone wants seconds!

You will need:

6 good-quality pork sausages
1 tbsp oil - optional
75g plain flour
1 large egg
75ml milk
salt and freshly milled black pepper

 

Method

Preheat the oven to 220C.

In a large bowl sieve flour, crack an egg and mix with a wooden spoon.

Start pouring the milk slowly while still mixing, until you have used all the milk and whisk until batter is at an even consistency; season with pepper and salt.

At this stage I sometimes put some herbs too, like dried thyme works well, but this is just my personal preference.

Place sausages in a roasting tin and place in oven until they’re cooked through and a little golden (not too much as they will go back in the oven).

Once sausages are done remove roasting tin from oven, place it over direct heat, pour the batter and place in the oven again.
If the sausages have not released enough oils add olive oil and let it heat up before adding batter.

Once the batter has puffed up and is golden on the top you will know it's ready, cut up into portions and serve.

Traditionally it’s served with mash and gravy - however the side is totally up to you, salad, mushy peas, carrots and peas...
