Crab_Cakes_by_NightShayde666_1If they are on the menu you can bet your life savings that I am going to order them. Obviously because I love them but most of all because I never make them at home.

The reason I do not make crab cakes at home is that I always assume the things I love to eat are a hassle to make . Could I be more wrong this time Crab cakes are simple to make and absolutely delicious – and you only use one mixing bowl so no mess in the kitchen either.

They can be an apitizer, a main or snack for work ... and they can be frozen so you can always have them handy for when friends pop round or for an evening meal when you do not feel like cooking.

What you will need for 2-3 servings

Crab meat 300 grams 
1 lime zest and juice
2 spring onions
1 chilli - small one if you like it hot or a larger one for a milder chilli taste
Bread crumbs - 6 tablespoons
1 Egg
Small piece of ginger
Coriander leaves
A table spoon of flour

How it's done

Place the crab meat in the bowl, zest and juce of the lime, peeled and grated ginger, finely chopped spring onion and chilli.

Fold in the coriander, breadcrumbs, beaten egg and a table spoon of flour. Season with salt and pepper.

Take the mixture into your hands and pat into shapes and leave to stand for minimum 30 minutes. You can also prepare these the day before – just cover in plastic wrap and leave refrigerated.

Heat a pan.  When it's hot add some olive oil (do not add oil before pan is hot), and place the crab cakes in the pan.  Leave crab cakes until they turn a crispy golden brown then flip over.

Serve with a light rocket salad and pine nuts or sour cream or a sweet chili dip. They're so good you can have them alone too!

The lovely things about crab cakes is that you can tweek the recipe to suit you,  You can have them without chilli or add sweet corn to the mix. Try them out and let us know of your own versions so we can share them with our readers.
