Grilled Chicken Curry
What you'll need... (for 4 persons)
1 whole chicken breast, cut into cubes
400 ml semi-skimmed milk
Curry powder
1 teaspoon olive oil
1 small onion
How it's done...
1. While boiling the rice (click here to view the best way of cooking rice), grill the chicken cubes on a grilling pan
2. Fry the finely chopped small onion in the teaspoon of olive oil, if it starts drying up put in a tablespoon of water until the onion is soft.
3. Totally cover the onion with curry powder and then slowly pour in the milk.
4. Stir well until the milk gets that orangy colour. Season and leave to simmer for about 10 minutes.
5. Mix the sauce with the rice and serve immediately.
Perfect for a Winter night! :)
Cold Pasta Salad
What you'll need... (per person)
100g tortiglioni pasta
100g cottage cheese
fistful of fresh basil
1 clove of garlic
How it's done...
1. Boil the pasta, cook it until cooked but firm. When it is ready, drain it and while still in the colander, hold it under cold running water until pasta has cooled thoroughly.
2. Finely chop the garlic and basil and then mix with the cottage cheese.
3. Mix the cottage cheese mix with the pasta and voila! :) A perfect cold lunch for these warm months!
